小時候,我覺得最幸福的一件事之一,就是在冬季吃一碗彰化市的老呂牛肉麵!
老呂是外省人,留著西裝頭,總是在瀏海夾著一根細細的髮夾,揮汗幫我們煮著麵。
當時一碗才$50, 湯頭清甜,沒有過多的辛香料,湯汁是發亮的琥珀色,啊~ 喝一口湯,就能榨出我體內無限的幸福感。
多年後,我離鄉、甚至遠嫁到澳洲,這10幾年來,我國內外吃不下50家的牛肉麵,就為了找尋我兒時記憶中彰化老呂牛肉麵的味道!
甚至曾經一口氣吃了三家,但喝一口湯就請店家打包,因為不是「老呂」的味道😭
這十幾年間,我嘗試過多種食譜,直到我發現,原來,只要兩顆八角,和一點調味,就可以煮出我記憶中,最香又清甜的味道,老呂的味道。
太多的辛香料,反而會壓過牛肉的美好!
希望我的這碗麵,也喚起你記憶中的溫暖與幸福感。❤️
《食材》
✔️牛膝肉Osso bucco (帶骨)1.5 kg -盡量找筋多的
(你可以用牛肋條、牛腩肉、牛腱。我在澳洲買不到,所以用牛膝Osso bucco,或是你也可以用Gravy beef, 但記得找筋多的)
✔️白蘿蔔、紅蘿蔔
✔️蔥兩根
✔️蒜6顆
✔️薑片6片
✔️辣椒一條(中間切一道)
✔️辣豆瓣醬 2 大匙
✔️醬油 100 CC
✔️八角 2顆
✔️米酒 約80 cc
✔️糖約半大匙
✔️白胡椒 少許
《作法》
1. 牛肉高湯2000 cc:牛肉+水約3000cc + 蔥白一根 + 40 cc米酒,滾了以後轉中小火煮25分鐘。不要蓋鍋蓋,高湯才會清澈。
2. 鍋子燒熱加兩湯匙油,把洋蔥先炒至透明,再放入薑片、蒜、蔥一根、八角、辣椒(中間要劃一刀)爆香。加入豆瓣醬、醬油、糖、米酒40 cc,炒個3分鐘後,加入牛肉一起拌炒。
3. 倒入牛肉高湯2500cc 左右,蓋上鍋蓋,滾了以後轉中小火煮15分鐘。

5. 加入紅、白蘿蔔中小火再煮60分鐘,蓋上鍋蓋。
《Ingredients》
✔️Osso bucco 1.5 kg
Beef finger, Brisket or Beef shin are actually better cut. But I couldn’t find any of them, so, I use Osso bucco.
✔️white and red radish
✔️Spring onion X 2
✔️Garlic x 6 cloves
✔️Sliced ginger x 6
✔️Red chill x 1
✔️Chill red bean paste 2 TBSP
✔️Soy sauce 100 ml
✔️Star Anise x 2
✔️Rice cooking wine 2 TBSP
✔️Sugar 0.5 TBPS
✔️White pepper

濕炒牛河
材料(2人份量):
河粉1斤
急凍牛仔扒6兩(220克)
彩椒8片
辣椒仔2隻
處理:
1. 牛仔扒,切薄片。
2. 牛肉,清水解凍。
3. 河粉,放筲箕內,清水沖洗乾淨,擎乾水。
4. 牛肉已解凍,清水洗淨,擎乾水,放碟上,用廚紙索乾,放碗內。
5. 牛肉調味:
a. 生粉少許,撈勻
b. 油1茶匙
c. 蠔油1湯匙
d. 生抽1茶匙
e. 胡椒粉少許
撈勻,醃10分鐘。
6. 辣椒仔,打直1開2,去籽。
7. 彩椒,打直1開2,去椗,去籽。
烹調:
1. 大火在鑊中燒熱油2湯匙。
2. 放牛肉落鑊,煎香30秒,放上碟。
3. 在鑊中加入清水200毫升,放彩椒灼30秒,擎乾水。
4. 放河粉落鑊,噴少量油在上面,煎至兩面有少許金黃色。
5. 轉慢火,加入少量生抽炒河粉至焦香,炒鬆河粉放上碟。
6. 在鑊中加入清水200毫升,大火煮滾,加入彩椒,同時加入:
a. 蠔油1湯匙
b.,生抽1茶匙及辣椒仔
c. 糖1茶匙
煮至大滾。
7. 放牛肉在鑊內,炒勻。
8. 加入生粉芡至收汁,放牛肉在河粉上,加入少量麻油。
9. 完成,可享用。
Stir frying rice noodles with beef
Ingredients (serving for 2):
Rice noodles 1 catty
Frozen veal steak 220g
Coloured bell pepper 8 slices
Chili 2 Nos.
Preparation:
1. Veal steak, thinly slice.
2. The beef, defrost with tap water.
3. Rice noodles, rinse with tap water. Drain.
4. Beef has been defrosted, rinse with tap water. Drain. Put on plate. Dry with kitchen towels. Put in a bowl.
5. Season the beef:
a. Tapioca starch little, mix well.
b. Oil 1 tsp
c. Oyster sauce 1 tbsp
d. Light soya sauce 1 tsp
e. Pepper little
Mix well. Season for 10 minutes.
6. Chili, divide each one into 2 shares vertically. Remove seeds.
7. Bell pepper, divide each one into 2 shares vertically. Remove seeds.
Steps:
1. Heat up oil 2 tbsp at high flame in wok.
2. Put beef in wok, fry for 30 seconds, put on plate.
3. Add in water 200ml in wok. Put bell pepper, soak for 30 seconds. Drain.
4. Put rice noodles in wok, spray little oil on top. Fry both sides of noodles into golden yellow.
5. Turn to low flame, add in little light soya sauce and fry the noodles until non~sticky. Put on plate.
6. Add in water 200ml in wok. Heat up at high flame, put bell pepper, add seasoning:
a. Oyster sauce 1 tbsp
b. Light soya sauce 1 tsp and the chili
c. Sugar 1 tsp
Heat it up.
7. Put beef in wok. Fry well.
8. Add in tapioca sauce until the sauce becomes thick. Put the beef on top. Add in little sesame oil.
9. Complete. Serve.

Toa Payoh Hwa Heng Beef Noodle was known as Odeon Beef Kway Teow in the 1970s, as it sat across from the now-defunct Odeon cinema at North Bridge Road. Since then, the stall has relocated a few times, and they are in Bendemeer Market Food Centre.
The dry version of their Beef Noodle looked absolutely mouthwatering. The al dente and springy thick bee hoon was topped with a generous amount of thin beef slices, before being smothered in an dark gravy. The gravy is infused with spices, herbs, as well as a bit of starch, which acted as a thickening agent.
The bright red chilli sauce sauce had a tantalising, acidic tang which lifted the flavours of the dish. It also contained a bit of chincalok (fermented shrimp), which really added umami to the soup and noodles. It really is a must-have accompaniment!
